Cuban Eggs Benedict Recipe

This recipe for Latin-inspired Eggs Benedict uses Cuban bread and a zesty mayonnaise-mustard sauce to add bold flavor to the dish. This is ideal for a special brunch or breakfast.

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • Preheat the oven to 375°F.
  • Place 4 slices of Cuban bread on a baking sheet.
  • Bake for 5-7 minutes, or until the bread is lightly toasted.
  • To make the sauce, combine mayonnaise, yellow mustard, and paprika in a small bowl.
  • Place aside.
  • In a large skillet over medium heat, heat the olive oil.
  • Cook for 2-3 minutes on each side, or until the ham slices are browned.
  • Set aside after removing from skillet.
  • Add vinegar and 2 cups of water to the same skillet.
  • Bring to a boil.
  • Poach the eggs in the skillet for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • Place a slice of ham on top of each slice of Cuban bread to assemble.
  • Drizzle the sauce over a poached egg on top of the ham.
  • Season to taste with salt and pepper.
