Guacamole Poached Eggs on Toast Recipe

This recipe is a tasty and healthy way to start the day. The creamy guacamole complements the perfectly poached eggs and crispy toast perfectly. The dish is also simple to make, making it an excellent choice for a weekday breakfast or brunch.

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Remove the pit from the avocado and scoop out the flesh into a bowl.
  • Mash the lime juice, garlic, jalapeño, and salt together in a mixing bowl with a fork until the guacamole is smooth.
  • Combine the diced tomato and cilantro in a mixing bowl.
  • Bring a pot of water to a boil, then reduce to a low heat.
  • In a small bowl or ramekin, crack one egg.
  • Pour the egg gently into the simmering water and shape the egg whites around the yolk with a spoon.
  • Rep with the second egg.
  • 3-4 minutes, or until the whites are set but the yolks are still runny, poach the eggs.
  • While the eggs are poaching, toast the bread and spread it with guacamole.
  • Drizzle the olive oil over the guacamole and season to taste with salt and pepper.
  • Remove the poached eggs from the water with a slotted spoon and place them on top of the guacamole toast.
  • Serve immediately, garnished with additional cilantro if desired.
