Instructions

  • Bring a large pot of water to a gentle boil.
  • Pour in the white vinegar.
  • Poach the eggs in simmering water for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • With a slotted spoon, remove the eggs from the pot and place them on a plate lined with paper towels to absorb any excess water.
  • Sauté the spinach leaves in a separate pan until wilted.
  • Season with salt and pepper to taste.
  • Place the poached eggs on top of the spinach and serve.
