This Smashed Avocado Poached Egg Bagel is a filling breakfast or brunch option. Toasted bagels are topped with creamy avocado and perfectly poached eggs for a dish that is both healthy and indulgent.

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Bring a large pot of water to a boil over high heat.
  • Meanwhile, in a small bowl, combine the mashed avocado, lime juice, salt, and pepper and set aside.
  • Each egg should be cracked into its own small bowl or ramekin.
  • Reduce the boiling water to a gentle simmer and stir in the vinegar.
  • Create a gentle whirlpool in the water with a spoon, then carefully slide one egg at a time into the center of the whirlpool.
  • Rep with the second egg.
  • Allow the eggs to cook for 3-4 minutes before removing them from the water with a slotted spoon and placing them on a paper towel to drain.
  • Spread half of the toasted bagels with the smashed avocado mixture.
  • Poach an egg on top of each bagel half.
  • If desired, add any additional toppings.
  • Serve right away and enjoy.
