This smoked salmon and poached egg sweet potato toast is a delicious and healthy breakfast or brunch option. The sweet potato slices serve as a nutritious base for the smoked salmon and poached eggs, replacing bread.

Ingredients

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • Brush both sides of the sweet potato slices with olive oil before placing them on a baking sheet.
  • Season with salt and pepper to taste.
  • Bake for 15-20 minutes, or until the potatoes are tender and lightly browned.
  • Bring a pot of water to a boil and add the white vinegar while the sweet potato bakes.
  • Reduce the heat to low and carefully drop the eggs into the water, one at a time.
  • 3-4 minutes, or until the whites are set but the yolks are still runny, poach the eggs.
  • With a slotted spoon, remove the eggs from the water and drain on a paper towel.
  • Place two slices of sweet potato on each plate to begin assembling the dish.
  • Serve with smoked salmon and a poached egg on top.
  • If desired, season with salt and pepper.
  • Serve right away.
