Instructions

  • In a skillet over medium heat, heat the olive oil.
  • Sauté the garlic until it is fragrant.
  • Sauté the cherry tomatoes and mushrooms for 2-3 minutes.
  • Fill the pan halfway with water to cover the vegetables.
  • Bring the white vinegar to a simmer.
  • Poach the eggs in the pan for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • With a slotted spoon, remove the eggs from the pan and place them on a plate.
  • Season to taste with salt and pepper.
