Instructions

  • In a small mixing bowl, combine the eggs and milk.
  • Stir the shredded cheese into the egg mixture to combine.
  • Heat the olive oil in a small skillet over medium heat.
  • Cook the diced potatoes in the skillet for 5-7 minutes, stirring occasionally, until golden brown and crispy.
  • Pour the egg and cheese mixture into the skillet with the potatoes.
  • Lift the edges of the omelette gently with a spatula to allow the uncooked egg to flow to the bottom of the skillet.
  • Cook for 2-3 minutes, or until the omelette top is set.
  • Using the spatula, fold the omelette in half.
