Shakshuka Breakfast with Eggs and Tomatoes Recipe

Shakshuka is a Middle Eastern breakfast dish made up of poached eggs in a spicy tomato sauce. It's a tasty and filling way to start the day.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Instructions

  • Warm the olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook for 5 minutes, or until softened.
  • Sauté for another 2 minutes with the minced garlic and chopped red bell pepper.
  • Add the diced tomatoes, paprika, cumin, salt, and pepper to taste.
  • To combine, stir everything together.
  • Simmer for 10-15 minutes, or until the sauce thickens.
  • Make 4-6 small wells in the sauce with a spoon, depending on how many eggs you want to use.
  • Crack an egg into each well and season with salt and pepper.
  • Cook, covered, for another 10-15 minutes, or until the eggs are cooked to your liking.
  • Garnish with fresh parsley or cilantro and serve immediately.
