  • Remove the pit from the avocado and scoop the flesh into a small bowl.
  • Mash it with a fork and season to taste with salt and pepper.
  • Fill a small pot halfway with water and heat it to a boil.
  • Reduce the heat to a gentle simmer and add the vinegar.
  • Fill a small bowl or ramekin halfway with the egg.
  • Stir the water in one direction to create a vortex in the pot.
  • Pour the egg gently into the vortex's center.
  • 3-4 minutes, or until the white is set but the yolk is still runny, poach the egg.
  • With a slotted spoon, remove the egg and drain any excess water.
