Instructions

  • Whisk the eggs in a small bowl until well combined.
  • Heat the olive oil in a nonstick skillet over medium heat.
  • Cook until the eggs are set on the bottom of the skillet, about 2-3 minutes.
  • Half of the omelette should be topped with feta cheese and diced tomatoes.
  • Fold the other half of the omelette over the filling with a spatula and cook for another minute, or until the cheese is melted and the eggs are fully cooked.
  • Season to taste with salt and pepper and serve hot.
