Instructions

  • Fill a saucepan halfway with water and half-way with white vinegar.
  • Bring the water to a boil.
  • Separate the eggs into small bowls.
  • Reduce the heat to a simmer and use a spoon to create a gentle whirlpool in the water once the water is boiling.
  • Pour each egg gently into the whirlpool for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • With a slotted spoon, remove the eggs from the water and place them on a paper towel to drain.
  • In a large mixing bowl, combine the olive oil, lemon juice, salt, and black pepper.
  • Toss the mixed greens, smoked salmon, red onion, and avocado with the dressing until evenly coated.
  • Divide the salad between two plates and top with a poached egg on each.
  • Serve right away.
