Polenta with Poached Eggs Recipe

Instructions

  • Bring the water and salt to a boil in a medium-sized saucepan over high heat.
  • Pour the polenta slowly into the boiling water, whisking constantly to prevent lumps.
  • Reduce the heat to low and continue to cook, stirring occasionally, for 20-25 minutes, or until the polenta is thick and creamy.
  • Fill another saucepan halfway with water and add the vinegar.
  • Bring the water to a simmer and crack the eggs into it one at a time.
  • Poach the eggs for 3-4 minutes, or until the whites are set but the yolks are runny.
  • With a slotted spoon, remove the poached eggs from the water and drain on a paper towel.
  • Stir the polenta with the butter and parmesan cheese until well combined.
  • Divide the polenta among four bowls and top with a poached egg in each.
  • Season to taste with salt and pepper.
