Poached Eggs, Smashed Avocado and Smoked Salmon Recipe
For a healthy and delicious breakfast, combine poached eggs, smashed avocado, and smoked salmon on top of toasted bread. The creamy avocado complements the salty smoked salmon and the runny yolks of the poached eggs perfectly.

Instructions
- Fill a pot halfway with water, then add the vinegar.
- Over medium-high heat, bring to a boil.
- While the water is heating up, cut the avocado in half and remove the pit.
- Scoop out the flesh and set it aside in a bowl.
- With a fork, mash the avocado and season with salt and pepper to taste.
- Toast the bread and top with the smoked salmon slices and smashed avocado.
- Separate the eggs in a bowl or ramekin.
- When the water begins to boil, reduce the heat to low and create a gentle whirlpool in the water with a spoon.
- Place the eggs in the whirlpool and poach for 3 minutes.
- With a slotted spoon, remove the eggs from the pot and place them on a paper towel to absorb any excess water.
- Season the poached eggs with salt and pepper and serve on top of the smoked salmon slices.
- Serve immediately with a drizzle of olive oil.
