Smashed Avocado on Toast with a Poached Egg Recipe

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Combine the smashed avocado, salt, black pepper, and lime juice in a small bowl.
  • Bring a pot of water to a boil and add the white vinegar to poach the eggs.
  • Reduce the heat to low and carefully drop the eggs into the water.
  • Allow to cook for 3 minutes, or until the whites have set but the yolks are still runny.
  • Toast the bread slices while the eggs are cooking.
  • Distribute the avocado mixture among the toast slices.
  • When the eggs are done, remove them from the water with a slotted spoon and place one on each slice of toast.
  • Serve immediately with any optional toppings.
