Hard Boiled Eggs with Mushrooms, Tomatoes, Alfalfa on Avocado Toast Recipe

This recipe is a delicious and healthy way to start your day. A balanced breakfast of hard boiled eggs, avocado, mushrooms, tomatoes, and alfalfa sprouts will keep you full and satisfied until lunchtime.

Ingredients

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes

Instructions

  • Cover the eggs in a saucepan with water.
  • Bring water to a boil and cook the eggs for 10 minutes.
  • Remove eggs from heat, drain water, and place in a bowl of ice water for a few minutes to cool.
  • While the eggs cook, heat the olive oil in a skillet over medium heat.
  • Cook for 5-7 minutes, or until the mushrooms are tender and lightly browned.
  • Season to taste with salt and pepper.
  • Toast the bread slices and top with mashed avocado.
  • Hard-boiled eggs, peeled and sliced in half, go on top of the avocado toast.
  • On top of the eggs, layer cooked mushrooms, sliced cherry tomatoes, and alfalfa sprouts.
  • Season to taste with salt and pepper.
  • Serve and have fun.
