This recipe for Hard Boiled Eggs on Avocado Toast is a quick and easy breakfast or lunch option that is also healthy and delicious. A creamy avocado spread on crispy toast, topped with protein-rich hard boiled eggs and a sprinkle of fresh parsley, makes for a filling meal that will keep you full and energized all day.

  • Prep Time: 15 minutes
  • Cook Time: 9 minutes
  • Total Time: 24 minutes

Instructions

  • Place the eggs in a pot and cover with 1 inch of cold water.
  • Over medium-high heat, bring to a boil.
  • Remove from the heat and set aside for 9 minutes, covered.
  • Place the eggs in a bowl of ice water for 5 minutes to cool.
  • Peel and cut the eggs in half.
  • Toast the slices of bread.
  • In a small bowl, mash the avocado with salt, black pepper, paprika, and lemon juice.
  • Place the toasted bread slices on top of the mashed avocado.
  • Add 2 egg halves to each toast.
  • Garnish with fresh parsley, if desired.
  • Serve and have fun.
