- Fill a large saucepan halfway with water and bring to a boil over medium-high heat.
- Melt the butter in a separate saucepan over low heat.
- Blend the egg yolks, lemon juice, salt, and cayenne pepper in a blender until smooth.
- Slowly pour the melted butter into the egg mixture while the blender is running, until thick and creamy.
- Warm the sauce over low heat, stirring occasionally.
- Heat the olive oil in a large skillet over medium-high heat.
- Combine the diced potatoes, paprika, garlic powder, onion powder, salt, and black pepper in a mixing bowl.
- Cook, stirring occasionally, for 10-15 minutes, or until the potatoes are crispy and browned on all sides.
- Cook the Canadian bacon in a separate skillet until crispy and browned, about 2-3 minutes per side, while the potatoes are cooking.
- Poach the eggs for 3-4 minutes in simmering water, until the whites are set but the yolks are still runny.
- Place the toasted English muffin halves on each plate to assemble.
- Add a slice of Canadian bacon, a poached egg, and a generous spoonful of hollandaise sauce to each half.
- Serve alongside the crispy home fries.
