Instructions

  • Make a whirlpool in the water with a spoon and gently pour one egg into the center of the whirlpool.
  • Rep with the remaining eggs.
  • 3-4 minutes, or until the whites are set but the yolks are still runny.
  • Transfer the eggs to a paper towel-lined plate to drain excess water with a slotted spoon.
  • Toast the bread slices and spread with unsalted butter.
  • Each slice of toast should be topped with smoked salmon, a poached egg, and a spoonful of caviar.
  • Season to taste with salt and black pepper.
  • Before serving, garnish with chopped chives.
