Instructions

  • Bring a medium saucepan of water to a gentle simmer.
  • Each egg should be cracked into a small bowl or ramekin.
  • Once the water has reached a simmering temperature, use a spoon to create a whirlpool in the center of the pot.
  • Pour the eggs, one at a time, into the whirlpool's center.
  • Cook for 2-3 minutes, or until the whites are set but the yolks are still runny.
  • Remove the eggs from the water with a slotted spoon and set them aside.
  • On a plate, spread cream cheese.
  • Arrange the avocado slices on the plate.
  • Poached eggs on top.
  • Sprinkle the top with blueberries and pumpkin seeds.
  • Season to taste with salt and pepper.
