Poached Eggs with Smoked Paprika and Bell Peppers Recipe

Poached eggs are combined with sautéed bell peppers and smoked paprika in this simple yet flavorful dish. Perfect for a weekend brunch or breakfast.

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • Bring water to a boil in a large frying pan over high heat.
  • Mix in the white vinegar and smoked paprika.
  • Lower the heat to medium-low and allow the water to simmer.
  • In a small bowl or cup, crack one egg.
  • Make a gentle whirlpool in the water and carefully slide the egg into the center.
  • Rep with the other egg.
  • Cook the eggs for 3-4 minutes, or until the whites are set and the yolks are done to your liking.
  • Remove the eggs from the water with a slotted spoon and place them on a paper towel to absorb any excess water.
  • Sauté sliced bell peppers in a separate pan until tender.
  • Season the peppers to taste with salt and pepper.
  • Serve the peppers with a poached egg on top of each.
  • Serve immediately garnished with chopped parsley.
