Poached Eggs with Pesto on Toast Recipe

For a delicious breakfast or brunch dish, combine poached eggs with pesto and toast.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Bring a pot of water to a boil, then stir in the white vinegar.
  • Each egg should be cracked into a small bowl or cup.
  • Reduce the heat to a gentle simmer and carefully place the eggs, one at a time, into the water.
  • 3 minutes, or until the whites are set but the yolks are still runny.
  • Toast the bread slices while the eggs are cooking.
  • Distribute the pesto evenly on the toast.
  • With a slotted spoon, remove the eggs and place them on top of the pesto toast.
  • In a small saucepan or microwave, melt the butter and drizzle it over the eggs.
  • Season to taste with salt and black pepper.
