For a delicious breakfast or brunch dish, combine poached eggs with pesto and toast.

- Bring a pot of water to a boil, then stir in the white vinegar.
- Each egg should be cracked into a small bowl or cup.
- Reduce the heat to a gentle simmer and carefully place the eggs, one at a time, into the water.
- 3 minutes, or until the whites are set but the yolks are still runny.
- Toast the bread slices while the eggs are cooking.
- Distribute the pesto evenly on the toast.
- With a slotted spoon, remove the eggs and place them on top of the pesto toast.
- In a small saucepan or microwave, melt the butter and drizzle it over the eggs.
- Season to taste with salt and black pepper.
