Instructions

  • Toast the bread slices until they are done to your liking.
  • Remove the pit from the avocado and cut it in half.
  • Scoop out and mash the flesh with a fork.
  • In a nonstick skillet over medium-high heat, heat the olive oil.
  • Cook for about 30 seconds, or until the rosemary sprig is fragrant.

  • Cook the eggs for 2-3 minutes, or until the whites are set but the yolks are still runny.
