  • Total Time: 20 minutes

Instructions

  • Preheat a skillet over medium-high heat.
  • In the pan, melt the butter.
  • Sauté the onions and mushrooms for 5-7 minutes, or until tender and lightly browned.
  • Season with salt and pepper to taste.
  • Poach the eggs while the vegetables are cooking.
  • Bring a pot of water to a boil, then add the white vinegar.
  • Cook the eggs in the water for 3-4 minutes, or until done to preference.
  • Place the bread on a plate and toast it.
  • Toast the fried onions and mushrooms on top.
  • Remove the poached eggs from the water with a slotted spoon and place them on top of the vegetables.
  • Serve immediately after seasoning with salt and pepper.
