Eggs Royale with Smoked Salmon Eggs Benedict Recipe

The rich flavors of smoked salmon and hollandaise sauce combine with perfectly poached eggs on a toasted English muffin in this classic breakfast dish.

  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Instructions

  • Bring a medium-sized saucepan of water to a simmer over medium heat.
  • To the water, add white vinegar.
  • Break the eggs into a small bowl or ramekin and place them in the simmering water.
  • Cook for 2-3 minutes, or until the whites are set but the yolks are runny.
  • Set the eggs aside after removing them from the water with a slotted spoon.
  • Melt butter in a small saucepan over low heat.
  • Whisk together egg yolks, lemon juice, salt, and cayenne pepper in a separate bowl.
  • While whisking constantly, slowly drizzle the melted butter into the egg yolk mixture.
  • Arrange the toasted English muffin halves on individual plates.
  • Place a slice of smoked salmon on top of each half.
  • Place a poached egg on top of each smoked salmon slice.
  • Serve the hollandaise sauce over the eggs right away.
