This filling breakfast dish is ideal for a lazy Sunday morning. The combination of savory sausages, crispy potatoes, and garlic-infused olive oil will definitely awaken your taste buds. The sunny-side-up eggs, with their runny yolks that create a rich, creamy sauce for the potatoes and sausages, are the star of the show. Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Peel and chop the potatoes into small pieces, then combine them with the garlic cloves and olive oil in a baking dish.
  • Toss to coat, then bake for 25 minutes, stirring halfway through.
  • While the potatoes are cooking, brown the sausages on all sides in a skillet over medium-high heat, about 8 minutes.
  • Set aside after removing from the skillet.
  • Cook the eggs sunny-side up in the same skillet until the whites are set but the yolks are still runny, about 3-4 minutes.
  • Divide the potatoes and garlic among four plates, then top with a sausage and a sunny-side-up egg on each.
  • Season with salt and pepper to taste, and serve right away.
