Asparagus Eggs Benedict with Home Fries Recipe
This recipe for Asparagus Eggs Benedict is a delicious spin on a classic brunch dish. The tender asparagus adds a healthy and fresh element, while the lemon butter sauce adds a bright and tangy flavor. The home fries are a filling side dish that complements the eggs perfectly.

Instructions
- Bring a large pot of water to a boil over high heat.
- Cook for 2-3 minutes, or until the asparagus is tender.
- Take the asparagus out of the pot and set it aside.
- In a small mixing bowl, combine the melted butter and lemon juice.
- Bring water to a simmer in a separate pot.
- To the water, add the white vinegar.
- Crack an egg into a small bowl and place it gently in the simmering water.
- Cook for 3 minutes if you want a soft poached egg, or 4 minutes if you want a firmer yolk.
- With a slotted spoon, remove the egg and set it aside.
- Continue with the remaining eggs.
- Place a slice of cooked ham on top of each toasted English muffin half, followed by the asparagus.
- On top of the asparagus, place a poached egg.
- Drizzle with the lemon butter sauce.
- Preheat a skillet to medium-high heat.
- Combine the diced potatoes, olive oil, garlic powder, paprika, salt, and pepper in a mixing bowl.
- Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
- Serve the Asparagus Eggs Benedict with home fries.
