Poached Egg with Smoked Salmon and Avocado Toast Recipe

This dish is a nutritious and tasty way to start the day. The creamy avocado complements the smoked salmon and poached egg perfectly, and the whole grain toast adds a satisfying crunch. It's also simple to make.

  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Toast the bread slices until they are crisp.
  • Mash the avocado in a bowl and season with lemon juice, salt, and pepper to taste.
  • Bring water to a boil in a saucepan and add white vinegar.
  • Crack an egg into a small bowl and carefully pour it into a pan of boiling water.
  • Rep with the second egg.
  • Cook for another 2-3 minutes, or until the egg whites are firm.
  • With a slotted spoon, remove the eggs and drain any excess water.
  • Place the toasted bread slices on top of the smoked salmon.
  • Place a dollop of mashed avocado on top of each slice.
  • Sprinkle with salt and pepper to taste and top with a poached egg.
