Poached Eggs with Avocado on Toast Recipe

Poached eggs and creamy avocado on toast make for an easy and nutritious breakfast.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Instructions

  • Fill a pot halfway with water, then add the vinegar.
  • Bring the water to a boil.
  • Separate the eggs into ramekins or bowls.
  • Reduce the heat to low and keep the water at a gentle simmer.
  • Pour the eggs into a saucepan of simmering water and cook for 3-4 minutes, or until the whites are set but the yolks are still runny.
  • While the eggs are cooking, toast the bread and spread it with butter or olive oil to taste.
  • In a bowl, mash the avocado and season with salt and pepper to taste.
  • Remove the poached eggs from the water with a slotted spoon and place on a paper towel to dry.
  • Place the toasted bread on a plate and top with the mashed avocado and poached eggs.
  • Season with salt and pepper to taste, and serve immediately.
